Kefir Making
Master the art of water and milk kefir
Kefir is a cultured, fermented milk drink similar to yogurt but with a thinner consistency. It's made using kefir grains, which are not actual grains but clusters of bacteria and yeast. Kefir is known for its high probiotic content and numerous health benefits.
Ingredients
- 1 tablespoon kefir grains
- 2 cups whole milk (or coconut/almond milk for dairy-free)
- For water kefir: 1/4 cup sugar per quart of water
Equipment
- Glass jar
- Plastic strainer
- Wooden or plastic spoon
- Breathable cloth cover
Step-by-Step Instructions
Add Grains
Place kefir grains in a clean glass jar.
Add Milk
Pour milk over the grains, leaving some headspace.
Cover and Ferment
Cover with cloth and let sit at room temperature for 24-48 hours.
Strain
Strain out the grains using a plastic strainer. The grains are reusable!
Enjoy
Drink immediately or store in refrigerator for up to 2 weeks.
Pro Tips
- •Use room temperature milk for best results
- •Grains multiply over time - share with friends!
- •Longer fermentation = tangier kefir
- •Grains can be rested in milk in the fridge when taking a break
Troubleshooting
Kefir is too thin
Use more grains or let ferment longer
Kefir separates into curds and whey
It over-fermented - still safe to drink, just shake well
Grains aren't growing
Ensure you're using good quality milk and optimal temperature
